April Fools Day Meal

April Fools Day Ice Cream Sundaes
(Mashed potatoes and gravy with a radish on top)
The "Cupcakes" are actually cornbread stuffed with
BBQ meat with a cream cheese and red pepper "frosting"
You can find the recipe here!

Our family is at a fun stage where they love every holiday and get excited to celebrate anything. April Fool's Day is no exception. I have made it a tradition to make something "fun" and "surprising" to eat on that day.  They never know what to expect, but know Mommy has some sort of trick up her sleeve.

These were not original recipe ideas. I just  Googled "April Fool's recipes" and looked through the images until I found something I wanted to make. This year I served "hamburgers," "ice cream sundaes" and "cupcakes."

Hamburgers"
nilla wafers
green icing
red icing
thin mint cookies
yellow or orange starburst
honey
sesame seeds
Directions: Squeeze a little green icing around the edges of a nilla wafter cookie to look like lettuce. Stick the thin mint on top of the green icing. Warm a starburst in the microwave for about 15 seconds to make it pliable. Flatten to shape into the "cheese." Layer the flattened starburst on top of thin mint. Top with red icing on outer edges to make "ketchup." Paint a small amount of honey on a nilla wafer and sprinkle with sesame seeds to look like a  hamburger bun. Place this nilla wafer on top of red icing. Repeat for as many "hamburgers" you wish to make.
Enjoy Creating!
